Recipe of the Month
Blueberry baked oatmeal
Ingredients:
1 cup fresh blueberries, fresh or frozen
2 eggs
1 1/2 cup rolled oats
1 tsp baking powder
1/3 cup brown sugar
1 tsp cinnamon
3/4 tsp salt
1 tsp vanilla
1/4 cup butter
1/2 cup milk
Instructions:
Preheat oven to 350 degrees. Spray an 8x8 baking dish with non-stick spray. Add all of the ingredients except for the blueberries to a mixing bowl and stir well to combine. Fold in the blueberries gently so as not to break them up too much, Spread mixture into the prepared baking dish and bake for 30 min or until a knife comes out mostly clean. Spoon into bowls and drizzle with additional blueberries and a drizzle of cream or syrup, if desired. Enjoy!

Fruit Pizza By Michelle Weinmann
"This is different from your average fruit pizza recipe, the crust is to die for!"
Ingredients:
1 package yellow or white cake mix (I use yellow)
2 eggs
1/4 c water
1/2 c butter
1/4 c brown sugar
1/2 c chopped nuts
Crust:
Combine ingredients and spread onto 2 pizza pans or a large cookie sheet, well greased and floured.
Bake at 350 for 15 min. Cool
Topping:
Beat 1 8oz. Package of cream cheese
1/3 c sugar
1/2 tsp vanilla
Spread on cooled cake. Top with fruit (fresh or canned)
(Optional): Heat 1/2 c strawberry glaze and dilute with 1/2 water. (I don’t like much glaze and sometimes skip it all together)
