Korean Beef Bowl
Ingredients:
1/4 cup Coconut Aminos (Soy sauce substitute)
1 tsp sesame oil
1/2 tsp crushed red pepper flakes
Cooking spray
1 lb meat of choice. I prefer ground or shredded chicken—but my husband likes it with beef!
1/4 cup chopped yellow onion
2 garlic cloves, crushed
1 tsp fresh grated ginger
3 cups cooked brown rice
1 small sliced cucumber
2 tablespoons sweet soy & Chili sauce (Thai Kitchen brand is delicious)
1/2 tablespoon sesame seeds
1 bag sliced baby carrots
Optional: 2 scallions
In a bowl, combine the coconut aminos, 2 tablespoons water, sesame oil, and red pepper flakes (if making with little kids—I skip the red pepper flakes myself).
Heat a large deep nonstick skillet and spray, add the meat (ground beef, or ground chicken, or shredded chicken). Break the meat up and cook through. Add the onion, garlic and ginger and cook for 1 minute. Pour the sauce over the meat and cover. Simmer for 10 minutes. To assemble the bowls place 3/4 cup rice in each bowl, top with 2/3 cup meat, cucumbers, sweet soy & chili Sauce, sesame seeds and carrots. Enjoy!
